Best Kabobs Ever
Sauce:
1 cup tomato juice or Bloody Mary mix
6 tablespoons butter
1/2 cup diced onion
1/4 cup tomato paste
1/2 teaspoon paprika
1/2 teaspoon fresh ground black pepper
3 cloves minced garlic
1 tablespoon Worcestershire sauce
1 teaspoon dry mustard or 1 tablespoon wet mustard
1 teaspoon salt
Hot sauce to taste
Kabobs:
2 pounds meat of your choice (beef or lamb works great), cut into 1-inch cubes
8 ounces fresh mushrooms, stems removed
1 pint cherry tomatoes or 3 large tomatoes cut into chunks
1 onion, quartered
1 large pepper of your choice, cut into 1-inch pieces
Can do ahead: Using your grill burner, heat the sauce ingredients in a saucepan until they reach a simmer. If there’s not enough liquid, add just enough water or broth to cover. Turn heat to low and simmer for 30 minutes. Let cool.
You have the option of using some of the sauce to marinate the meat overnight, or you can go ahead and start up the grill now and use the sauce as you cook. If you marinate, be sure to reserve some sauce for basting.
Preheat the BBQ to medium heat.
Using wooden or metal skewers, make your kabobs by alternating pieces of meat, mushrooms, tomatoes, onions, and peppers. Brush sauce all over the kabobs.
Oil your grill (or put down some foil if you prefer to save yourself a mess) and arrange the kabobs on the grill. Cook for about 10 minutes, turning occasionally, until the meat is cooked through. Baste with more sauce during the last few minutes of cooking. Enjoy!
